Every Friday our downtown area hosts a Farmers Market that is so much fun. Local merchants, farmers, and vendors gather in the ‘alley’ to sell their merchandise.
A few weekends ago, my daughter and I stopped by a local bakeries table that was set up there. He had made some different sauces that he was selling. I had never had Chimichurri before, so the first taste for me was amazing. The ingredients seemed simple enough, so of course I headed home and tried my version.
I have NO idea why I haven’t tried this sauce before. OH MY.. it’s the easiest thing in the world to make and PACKED with flavor.
1 bunch flat leaf parsley
8 cloves garlic, minced
3/4 cup extra virgin olive oil
1/4 cup red wine vinegar
Juice of 1 lemon wedge
1 tablespoon diced red onion
1 teaspoon dried oregano – optional
1 teaspoon black pepper
1/2 teaspoon salt
Pulse the parsley first to chop. Than add the rest of the ingredients and blend.
You can reserve some for marinade and the rest for topping sauce. It’s also great as a dipping sauce too!!
