That’s what I fixed for my family tonight and it was delicious! I have a Vegetable Quiche recipe that is something like this recipe, but this one was much simpler.
There’s not a lot of ingredients to this one. Just eggs, squash, oil, salt and pepper, and some Romano cheese (which is optional), but it is truly one of those dishes where the simpler, the better.

Now a days a dozen of eggs isn’t REALLY expensive, so being able to use them as dinner meal allows you to fill up cheap.
We are lucky to have neighbors who have over 20 some chickens, so we get fresh farm eggs all the time. I love cooking with eggs. They are so easy to make and you can add just about anything to them and make a meal.
