I had posted this recipe awhile back, but for some reason it was lost out in the world wide web.
This is one of my All Time Favorite sauce recipes. I miss dairy when it comes to sauces like this, but after making this a few times, I can say ‘dairy what?’.. don’t miss it anymore.
Vegan Fettuccine Alfredo Sauce
2 Tablespoons olive oil
1 large onion, chopped
3 garlic cloves, minced
1 cup raw soaked & drained cashews
2 cups water
1 Tablespoons lemon juice
salt and pepper to taste
Heat oil in a medium skillet over medium high heat. Add onions and let cook until soft. Add garlic and let cook a few more minutes. Remove from heat.
In a blender, combine onions, garlic, cashews, water, and lemon juice. Blend on high until creamy and smooth. Season with salt and pepper to taste.
Toss with pasta and serve hot.
