This recipe came about by just playing around with some ingredients I had on hand. It was AMAZINGLY delicious and there were NO leftovers to be had.
It’s simple, easy, and just plain ole YUMMY!
3 avocados – pitted and diced
1/2 tsp. salt
1/2 tsp. ground cumin
pinch of pepper
2 Tbsp. lemon or lime juice ( I like lime when working with avocado)
1 medium tomato diced
1 Tablespoon chopped red onion
1 Tablespoon chopper fresh cilantro (optional – I’m not a big fan of cilantro so I leave it out.
In a medium bowl, use a large spoon and gently mix all the ingredients, adjusting seasoning to taste.
Slice a fresh loaf of gluten free French bread.
In a medium size skillet, melt 1 to 2 Tablespoon healthy butter/spread, once melted add bread slices and cook on both sides till lightly brown.
Remove from skillet and top with avocado mixture.
