There are those morning when we REALLY would love to have some pancakes, but no one feels like making them. So the other day we decided to make some GF Pancake Dogs using my corn dog maker. Once we got them all cooked up, we froze them, and now we can just pop them in the microwave or toaster oven and have a tasty breakfast treat.
Gluten Free Pancake Mix
3/4 cup rice flour
1 tablespoon baking powder
1/4 cup oil
1/4 teaspoon salt
2 Tablespoons sugar
1/2 teaspoon vanilla extract
1 cup milk
Place all the ingredients in a medium size bowl. Mix very well. The batter will become quiet thick. Heat a pan or griddle to medium heat. Pour the batter onto the pan in the desired size you desire. Cook until small bubbles appear on the surface and bottom is lightly browned. Flip and continue to cook until lightly browned on both sides.
The Not So Perfect Housewife way:
- I tripled this recipe to make sure we had a good amount of pancake dogs
- We made chocolate chip pancakes and blueberry pancakes alongside with some plain
- They worked perfectly in the corn dog maker! Easy for dipping into syrup!
