This a VERY simple meal to make and one of the YUMMIEST I think we’ve ever had!!
We’ve been trying to eat MORE veggies and less meat around here, so I’ve been experimenting with different recipes.
This one was simple..
Slice zucchini thin
Slice onions thing
Sauté in garlic and a little bit of butter
Layer on Corn Tortillas (Gluten Free) with shredded Colby Jack cheese and bake at 350’ F till golden brown.
They were YUMMY!!!
