Healthy & Light Meal Idea for Summer ~ #NowWellness
My husband works outside all day, so during these hot summer months in Florida, he prefers dinners that are light and healthy. I prefer not having to cook over a hot stove, so it works out really well for the both of us.
One ingredient that I have recently started to experiment with more and more is Quinoa. Quinoa is a nice light grain that is really easy to fix and is great source of protein and iron. I like to substitute Quinoa in some of my regular recipes that call for rice just to change things up a bit. It’s always has a nice texture and a somewhat nutty flavor.
It was the perfect opportunity to try out the Now Foods/ Living Now Gluten Free Tri-Color Quinoa that I received in my sample box. I usually cook with just regular quinoa, so having the tri-color was fun.
The quinoa cooked up perfectly. Once the quinoa had cooled and I was able to mix all the ingredients together, I let the salad sit while I baked the Felafel’s. This allowed for all the different flavors to combine and make for a terrific new cold salad for us to enjoy.
These two paired together made for a delicious, light, and healthy dinner.
