I have been a dessert lover since I was little, so when I had to remove dairy from my diet I thought it would be nearly impossible to find or fix something delicious and sweet to enjoy.
I soon came to find out that there are a lot of great options for allergy or intolerance challenged people like me! You can find all kinds of allergy friendly options in the natural markets, but if you are cook like me, finding great cookbooks that tailor to your allergies is a bonus.
Love Fed: Purely Decadent, Simply Raw, Plant Based Desserts by Christina Ross
Love Fed by Christina Ross is just one of those great cookbooks.
Even though Love Fed comes from Christina’s passion for raw and vegan baking rather than an allergy outlook, I loved this cookbook. Packed with over 80 delicious, easy to follow recipes, Love Fed will have you in the kitchen making dishes like German Chocolate Cake, Mango Sunrise Surprise “Cheese” Cake Bites, and so much more.
I enjoyed learning about Christina in the Introduction section. Here I learned about how she calls herself The Accidental Baker and also where she shares about all her favorite baking ingredients.
My Love Fed by Christina Ross – Cookbook Review
This Maca-Chia Protein Pudding really surprised me. As I was putting it together, I really started to second guess my choice of recipes. I had only used Maca powder a few times before, so I was thinking this really might not taste all that great.
But once I blended it all together and took a small taste test, I realized Christina knew what she was doing. This was REALLY good.
Love Fed: Purely Decadent, Simply Raw, Plant Based Desserts, is a beautiful cookbook filled with all kinds of delicious recipes that will have you in the kitchen baking for hours and enjoying every minute of it.
Maca-Chia Protein Pudding
Yield: 2 servings
Prep time: 5 minutes, plus 1–2 hours for pudding to set
Feeling lethargic? This pudding will energize you. Not only does it contain chia seeds, famously used for stamina by the best runners in the world—the Tarahumara Indians, who run for hundreds of miles at a time—but it also provides a dollop of maca, an Andean herb also thought to help stave off fatigue. Chia is also packed with protein—nearly 5 grams per ounce.
1⁄2 medium banana
2–3 pitted dates
2 1⁄2 tbsp. white or black chia seeds
2 tbsp. cacao powder
1 tsp. maca
1 c. almond milk
2 tbsp. almond butter
Chopped nuts, for garnish (optional)
Cacao nibs, for garnish (optional)
Place the banana, dates, chia seeds, cacao powder, maca, almond milk, and almond butter in a blender and blend until smooth. Pour into 2 small bowls or ramekins, cover, and place in the refrigerator. Chill until the ingredients gel, about 1–2 hours. If desired, garnish with chopped nuts and cacao nibs. Serve immediately or store in the refrigerator for up to 3 days.
