Unfortunately my tomato plants have been BOMBARDED with stink bugs.
Trying to get rid of them organically has been difficult and with the sudden down pours … my tomato plants are pretty much done for the summer. Bummer..
But before I pull them all up, I was able to snag a few that the stink bugs didn’t get to and made a batch of marinated tomatoes.
OH MY GOODNESS!!
This was AHHHHMAZINGLY delicious…. and it was gone in one afternoon.
On toasted bread… in pasta.. on a salad or just with a spoon.. these are YUMMY!
* Now you’ll have to go by trial and error with this one because depending on how many tomatoes you have to cut up, you may need more or less of these ingredients. *
- Chopped FRESH Basil
- Chopped FRESH Chives
- Chopped FRESH small sweet onion
- Light Olive Oil
- Balsamic Vinegar
- Salt & Pepper to taste
Place all the herbs in the jar and pour oil and vinegar over top. Mix well. Add onions and tomatoes than mix well.
The longer you leave them in the fridge.. the better the taste.
