Back in the Day…
What seems like a VERY long time ago, I was one an extremely organized housewife.
I had cleaning charts, chore charts, grocery lists, and MONTHLY menu plans.
It was was a beautiful thing. Life was nice than (it’s still nice now, I’m just being dramatic). Dinners were planned out, the house was clean, and the days seemed to go so smoothly.
Well… OK, maybe life wasn’t ALL that organized and beautiful, but I do know that when I planned out meals, whether it was a month ahead or a week in ahead, my life did seem to run a lot smoother.
That is why I am going to hold myself accountable and start a Menu Plan Monday blog post. Each week I am going to post what my menu is for the upcoming week. This way I’ll know that I have to plan a menu.. because I need to post about it.
My menu’s will be mostly plant based and dairy-free, though once or twice a week, you may find some animal based items. I try to stay on a mostly plant based diet, but I do have some carnivore eating family members, so as long as its organic and or wild caught.. I’ll make it.
I will try to include links to either recipe pages and or cookbooks when possible. When planning my meals I usually have a stack of cookbooks alongside of me, but sometimes my recipes are just ones I make up or know by heart.

Monday – My Daughter’s Birthday Dinner – Eating out at one of our favorite local places!
Tuesday – Broccoli and Veggies over Rice
Wednesday – Dairy Free Baked Gluten Free Ziti with Spinach, Salad, and Gluten Free Garlic Bread
Thursday – Veggie Burger (Dr. Praeger’s) Gluten Free Wraps, Three Bean Salad, and Tortilla Chips
Friday – Homemade Gluten Free Pizza
Saturday – Leftover Night
Sunday – Organic Rotisserie Chicken (this makes the carnivores in my family happy), carrots, and potato salad
Pretty simple isn’t it. But, I’m telling you.. planning out meals makes the week go by so much better. I’m actually kind of excited to be starting back up again.
