I hope everyone had a great weekend. Mine was actually kind of quiet. The hubster went to the Nascar race on Saturday night and I had the house all to myself, which is always nice. You would think I would have taken the time to get a lot done around the house, but Nope.. I just relaxed, made pancakes for dinner at one point and watched The Avengers movie for fun.
So now onto the week ahead and my menu…
Monday – Vegetable Risotto – no specific recipe planned here. Just going to follow the directions on the Village Harvest Arborio Rice and than add some roasted vegetables.
Wednesday – Na-Quinoa’s – Nacho’s with Chili and Quinoa over Tortilla Chips
Thursday – Vegan Shepherds Pie
Friday – Date Night – Dinner out!!
Saturday – Homemade Gluten Free Pizza – I actually use the Focaccia Bread recipe for our crust sometimes. I double it and it turns out amazing!
Sunday – Leftovers!
Not a real exciting week of recipes, but totally doable and doesn’t require me to get too much at the store since I have a lot of the ingredients already in the pantry.
