I’m on a hammock, under some tall palm trees, looking over a quiet beach, and listening to the waves crash on the shore. Slow sips of a cold, delicious Piña Colada make the hot summer day pretty awesome.
That would be nice wouldn’t it?
OK, well I don’t have any special way to transplant us to a beautiful beach, but I do have an amazingly delicious recipe that will satisfy any Piña Colada cravings you may have.

Summer is here and Barlean’s has given me a challenge.
Using their Pina Colada Omega Swirl, I needed to come up with a recipe that encourages everyone to ‘chill‘ this summer.
I love helping people relax and chill, so I was more then happy to accept this challenge.
Who Wants To Turn The Oven On?
When summer hits here in Florida, I go out of my way to find recipes that DO NOT have me turning on my stove. I mean, I love my oven and enjoy cooking, but it’s just too darn hot to be heating up the house.
No bake, crock-pot, and grilling type recipes are my go to. And that includes desserts and snacks.
Some of the best summer recipes include only one other large appliance in your kitchen… your refrigerator!
So, for this challenge, I knew that any Piña Colada type recipe I was going to come up with was going to have to be no bake and simple.

Putting this recipe together was a lot of fun.
I knew the minute I tasted the Pina Colada Omega Swirl that there were going to be pineapples and coconut involved somehow. I also caught myself humming the song “Escape” (the Pina Colada song) as I thought about what exactly I was going to create.
Barlean’s Pina Colada Omega Swirl has a refreshing flavor that can easily be added to a fruit smoothie or drizzled over your favorite ice cream.
With no fishy taste at all, I was honestly surprised at how delicious this was. I immediately thought about making some kind of icy, smoothie type recipe, but then the word ‘challenge’ popped in my head, so I gave it a little more thought.
At just about the same time, my afternoon snack cravings were kicking in.
Snack.. that’s it.. I’ll make something everyone can snack on.
No baking and simple to make. Let’s do this.
With Just A Few Ingredients..
Beyond not wanting to turn the oven during the summer, keeping it light and easy it also my goal.
With just a few ingredients, these No Bake Pina Colada Bites are perfect for an afternoon snack.
And not only do you get your snack cravings satisfied, but you can also get your daily dose of Omega 3’s in at the same time! How cool is that?
Putting It All Together
Stickiness is what is needed when you’re putting together a ‘bite’ type snack. If you’re not going to bake it, you’ll needy something sticky to keep it together.
Pitted dates are my go to for stickiness. These fiber packed, sticky, dried fruit are also extremely sweet, so not only do they hold things together, but they also sweeten it up too.
Alongside the pitted dates we are going to add in pineapple, coconut, and raw almonds with the Pina Colada Omega swirl to make one delicious no bake bite.

No Bake Piña Colada Bites – Gluten Free & Omega Rich
So easy to make and even better for you.
- Prep Time: 10
- Total Time: 10
- Yield: 10 Balls 1x
- Category: Snack
- 1 cup raw almonds
- 6–7 medjool dates, pitted
- 1/2 cup dried pineapple (unsweetened if you can find them)
- 1/2 cup shredded coconut
- 1/2 tsp vanilla extract
- 1 Tablespoon Barlean’s Pina Coloda Omega Swirl
- pinch of salt (optional)
- Add the almonds and coconut in food processor. Pulse a few times till almonds are chopped up fine.
- Add in pineapple, dates, and omega swirl. Pulse until a stick mixture forms.
- Roll mixture into bite size pieces and place in air-tight container
- Place in fridge for at least an hour to chill
- Snack freely
