One of my favorite recipes for fall/Thanksgiving is called a Sweet Potato Casserole.
Every time I have made this, it disappears in seconds. It’s so sweet you could make if for a dessert rather than a side dish.
2 cups mashed sweet potatoes
1 cup sugar
1/2 cup evaporated milk
1/2 tsp. nutmeg
1/2 tsp. vanilla
1/2 tsp. cinnamon
2 eggs, beaten slightly
1/4 cup melted butter
Mix above ingredients together and pour into a greased 2 quart casserole dish.
3/4 cup crushed Total cereal or corn flakes
1/2 cup packed brown sugar
1/2 cup chopped walnuts or pecans
1.4 cup melted butter
Mix these together and sprinkle on top of casserole.
Bake at 350′ F for about 40 minutes or until set.
Will firm up when out of oven
